Apple Pie Oatmeal is coziness in a bowl. It’s warm and comforting, and it’s the perfect breakfast to get you through those chilly autumn mornings. The heavenly aroma of apples and cinnamon cooking in the kitchen is sure to make getting ready for the workday much easier. This quick and easy recipe is vegan and gluten-free.
Apple Picking
Every year, Dennis I kick fall of with a day trip to Warwick, NY, we have lunch, do a bit of shopping, spend some time apple picking, and stop at farm stands to load up on freshly harvest autumn vegetables. When we come home, we stuff our basement fridge with our produce haul. I then spend then next few weeks looking for ways to use the apples. Of course, we do snack on them as is, but I also like to bake them, toss in into salads, and add them to my morning oatmeal.
Oatmeal
Growing up, I wasn’t a big fan of oatmeal. I found it too soft and mushy for my tastes. As an adult, I’ve tried to find ways to make it more palatable, because it makes a quick and easy breakfast, and I know it has many health benefits. I like to add fruit and nuts to give it more texture.
Some of the health benefits of oatmeal include:
- Oats are low in calories and high in nutrients. They’re a good source of magnesium, iron, zinc, folate, and some b vitamins.
- They’re loaded with beta-glucan, a powerful soluble fiber that can increase the feeling of fullness and promote growth of good bacteria in the digestive tract.
- Oats are a good source of polyphenols, an antioxidant that may help lower blood pressure.
- The beta-glucan found in oats is also knowing to reduce LDL cholesterol.
- Oats can help lower blood sugar levels, and they may also improve insulin sensitivity.
How to Make Apple Pie Oatmeal
Apple Pie Oatmeal comes together super quickly!
- First, you mix the rolled oats, diced apple, non-dairy milk, apple sauce, maple syrup, ginger, cinnamon, and vanilla extract together in a pot over medium-high heat.
- Bring the mixture to a boil and then lower the heat to medium. Stir-frequently until the apples have softened and the oatmeal has thickened.
- Once the oatmeal has cooked, stir in the almond butter and top it with the toasted pecans or walnuts.
I like to add a bit of almond butter to my oatmeal for a little extra punch of flavor and creamy texture, and like to top it with toasted pecans. Walnut butter and walnuts would also be a delicious addition, if you prefer. (I love walnuts, but Dennis doesn’t care for them, so I rarely cook with them.)
Apple Pie Oatmeal
- 1 cup rolled oats
- 2 cups unsweetened non-dairy milk
- 1 apple (diced)
- 2 tablespoons applesauce
- 2 tablespoons maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ¼ teaspoon ground ginger
- 1 tablespoon almond butter
- 2 tablespoons toasted peacans or walnuts

In a medium pot over medium-hight heat, combine the rolled oats, apple, cinnamon, ginger, non-dairy milk, applesauce, maple syrup, and vanilla extract. Mix until well combined.

Bring the mixture to a boil and then lower the heat to medium. Cook for about 10 minutes, stirring frequently, until the mixture thickens, and the apple and oats have softened.
- Stir in the almond butter.
- Remove from heat and divide among 2 or 4 bowls.

Serve topped with toasted pecans or walnuts
