Fresh broccoli rabe and juicy vegan sausage make for the perfect pasta pairing. This dish is our take on a classic Italian recipe loaded with so many unique and delicious flavors.
Growing up in New Jersey, my family enjoyed broccoli rabe and sausage pasta regularly. After I went vegan, my parents adapted the recipe a bit and this vegan-version was born. We enjoyed this almost weekly when I was living back at home and it always makes me so happy when I make it now in my new home with Jasmine.
Traditionally for broccoli rabe and vegan sausage pasta, orecchiette is used, but any pasta size and shape will work if you have a preference or certain variety already on hand! We thought it would be fun to use rigatoni instead, mostly because we appreciate the aesthetic and it’s great for photos haha.
Along with broccoli rabe and sausage, this recipe has a mix of sun-dried tomatoes, garlic, shallots and vegan parmesan to create a unique but tasty flavor that we promise you will love. When it comes to the type of vegan sausage to use, we think this matters a great deal. We recommend using the Hot Italian Sausage from Beyond Meat for optimal flavor.
This recipe is perfect to make for Valentine’s Day. It’s simple to whip up, full of flavor, and we promise it will be a hit with your loved ones. In addition to this dish, we also have an easy vegan cheese fondue, and swirled chocolate bark recipe to make your home cooked Valentine’s Day meal complete.

Description
Fresh broccoli rabe and juicy vegan sausage make for the perfect pasta pairing. This dish is our take on a classic Italian recipe loaded with so many unique and delicious flavors.
Ingredients
- 1 bunch of broccoli rabe * (see notes)
- 16 oz. pasta of your choice (gluten-free as needed)
- 3 plant-based sausages, slices into rounds (we used Beyond Meat Hot Italian Sausage)
- 4 cloves of garlic, finely minced
- 1 shallot, sliced thin
- 7 sundried tomatoes in oil, roughly chopped
- 1/4 teaspoon red pepper flakes, or to taste
- Salt and pepper, to taste
- 1/4 cup minced fresh parsley
- Optional: 1/4 cup shredded Parmesan cheese (we used Violife; or opt for homemade)
Instructions
- Prepare the broccoli rabe by removing the light-colored leaves as well as the bottom portion of the stems (about 1-inch off of the bottom).
- Bring a large pot of water to a boil. Prepare an ice bath in a large bowl.
- Add a pinch of salt to the boiling water and then blanch broccoli rabe for about 1 minute. Drain the broccoli rabe and immediately add it to the ice bath for 1 minute. Drain and transfer the broccoli rabe to a cutting board. Cut the stems into bit sized pieces and set aside.
- Bring another medium pot of water to boil and prepare pasta according to package instructions. Drain and do not rinse.
- In a separate pan, add in the vegan sausages and cook until caramelized and browned. Remove the sausage from the pan and set aside. In the same pan in the leftover oil from the sausage, add in the garlic and shallots and sauté until fragrant and translucent. Add in the red pepper flakes snd cook for about 1 minute more, stirring often.
- Add in the broccoli rabe, sun-dried tomatoes, vegan sausage and cooked pasta. Mix ingredients through until fully combined. Season with salt and pepper to taste.
- Allow the mixture to cook for a minute or two more on low heat, stirring often, until everything is warmed through.
- Serve with a generous sprinkle of both vegan parmesan cheese and parsley. Enjoy!
Notes
- Avoid broccoli rabe with yellow leaves and/or flowers. The florets turn yellow as they age, which is sign that the broccoli rabe is past its prime.
